Mini Lemon Curd Phyllo Cups with Berries

Ingredients:

  • 1 package of Athens Mini Phyllo Shells (15 cups)

  • 1/2 cup lemon curd (store-bought or homemade)

  • Fresh raspberries and/or blueberries

  • Optional: powdered sugar or mint leaves for garnish

Instructions:

  1. Preheat oven (optional): If you want a crisper shell, preheat your oven to 350°F (175°C) and bake the phyllo cups for 3–5 minutes. Let them cool before filling.

  2. Fill: Spoon about 1 teaspoon of lemon curd into each phyllo shell.

  3. Top: Place one raspberry or a few blueberries (or both!) on top of the lemon curd.

  4. Garnish (optional): Dust with powdered sugar or add a tiny mint leaf for a fresh look.

  5. Serve: Best served fresh, but can be chilled for 1–2 hours before serving.
